Aunt Mary's Old Fashioned Recipes

 

Old Fashioned Gingerbread

2 eggs
1 cup brown sugar
3/4 cup molasses
3/4 cup oil
Combine

2-1/2 cups flour
dash of salt
2 tsp soda
1/2 tsp baking powder
1-1/2 tsp cinnamon
1/2 tsp each cloves and nutmeg
1 Tbsp ginger

Add egg mixture to dry ingredients and stir well.
Add 1 cup strong, hot coffee.
Lightly grease and flour oblong baking dish. 13x9 is ideal. I use glass but a heavy metal one should work fine.
Bake at 325 degrees for 35 minutes or until toothpick comes out clean.
This a cake gingerbread, not the flat, chewy kind. Really good. Top with lemon sauce or whipped cream.
